Why do you leave the huge varieties of Chinese noodles-in-broth dishes out of your polls? After all, China (Shanxi Province to be exact) is the home of noodles. It was invented and perfected there.
Don't get me wrong. I love ramen, but ramen was only imported into Japan from China around 150 years ago. The Chinese have been making noodles and perfecting dishes for around 2000 years!
