Hi. I'm excited that you are about to open up a restaurant in Brisbane. Ajisen Ramen is pretty average and their soup is only warm. Please make sure that your soup temperature is right. Please also make tender, juicy char-shu. It should melt in the mouth without needing to chew.
Ichi-ban Boshi on the Gold Coast is quite good. They make a fantastic Tantanmen Ramen and also their Karage Don is very good. It is cooked with ponzu. I hope that you also offer these menu choices.
It will be great to have a quality Ramen restaurant in Brisbane. I only hope that you are a success and can open another branch near St Lucia (UQ) as there are many Japanese families situated around here and it is much easier for families to park rather than the expense of going to the city.
