As far as video quality goes I'm pretty sure these cameras are about the same. The 5D full frame is better for photos without a doubt...better lens options...DOF...etc. However the form function, dedicated buttons, higher resolution screen and framerates of the 7d probably make it the go to for video at the moment...a least in the DSLR world.

I have found a lot of the artifacts in with the 7d happen in the mid shadow areas and in high blur (DOF) areas...especially when there is not enough light. They are significantly less obvious in daylight and sun areas. Rating the camera at 250 or less and stopping a lens to something like a F4 keeps things much clearer and sharper.

Lines and compression artifacting in the 7d is really annoying. I use "Remove Grain" in After Effects on my footage before I color correct and this cleans things up a TON. It generally removes the hairline vertical banding and smooths the aliasing without noticably or negatively affecting the images...but it takes a while to render.

After color correction I add a very slight amount of film grain back into the image, which tends to unify things.
