Of course cheese has to be there, preferably mozzarella, asiago, provolone, and muenster. The best toppings are tomatoes, mushorooms, and artichokes. I'm a vegetarian though, but some of the best pizza I have ever had was vegetarian.
I agree cheese is not a topping, there are some pizza chains whom maybe pulling this dirty trick, but so far it is not main stream thank god. Toppings wise i go with 3 options pineapple, hot peppers, bacon strips, or pepperoni with green olives and pineapple or roasted red peppers, feta cheese and grilled steak.

Since my very favorite pizza is plain cheese (and no I'm not seven!!) , I should probably think of it as a topping but I don't! I just consider it a bonus that I have cheap tastes! :P

Interestingly, last week I tried the $10 deal, any crust, any toppings, etc. from Pizza Hut for the first time in years. I asked for one of the "free" toppings to be "extra cheese," and I was immediately corrected and was told that extra cheese is NOT a topping, per Pizza Hut that is. . .

Cheese is as much a topping as the sauce.
