How frenzied do you get about Thanksgiving meal preparation?

    We usually have chicken. It tastes better and it's easier to fix. No muss, no fuss. After all, it's isn't the food that makes the occasion, it's the gathering of the family.

    I keep it simple by doing the same thing year after year - it's now almost demanded and I'm bored! I can add dishes but never take away and there's only so much people can eat at one sitting.

    I always swear I'm going to mix it up a little but when it comes right down to it I like the basic menu - Turkey with bread stuffing, mashed potatoes, peas with pearl onions, butternut squash, a pickle dish, relish, and cream cheese stuffed celery sticks. And the rolls - the brown and serve ones of course.

    Sometimes I add sweet potatoes and mashed turnip, but never delete anything.

    I can do this in my sleep!

    Brining (sp?) the turkey has become an absolute must for us. Arroz Carretera is a Brazilian black bean and rice (basically) casserole dish that fits into our Thanksgiving fantastically and is worth a try - not too complicated and adds a bit of wow! I just thought right now of trying it as a stuffing! Wow! ...and I'm off!

    We gather from all over the country at our younger daughter's house (best combination of space and access to a major transportation hub). She and her husband take care of most of the preparation, but I fix one or two birds, depending on how many are able to make it (it takes two or three with our family - her husband's brother smokes one while I stuff and roast one or two) and a traditional family recipe for yams and apples. And it all works out nicely.
