Should the guys have stayed in Bristol once they realized Sam had been there before?

Hell no -- they should have gotten out as fast as the Metallicar could carry them. (Which, by the way, is very, very fast.)

Definitely -- Sam needed to finish what he started, and make up for past wrongs.

Perhaps it could have worked if Sam had stayed hidden and Dean had been the public face...

It doesn't matter -- even if they'd run, Roy would have caught up with them somehow.
