Will you experiment with vegan baking?

    I have to cook without eggs and dairy. My son has a life-threatening allergy to both of them to which we have to carry around an epi-pen. His life depends on it. Also, dairy and egg allergies are the top two food allergens, well above the gluten and peanut. So, thank you for posting this, I'm copying recipes and resources right now.

    Unfortunately "humane eggs" are a all but a myth. I'll let you google for what "free range", "cage free" and "organic" mean to egg producing animals, it's not much. Sure, it's possible that you might be able to find someone who keeps chickens as pets where you approve of the conditions - even then I'd ask you to think about where the male chicks went. The chicks likely came from the same hatcheries as the factory farm chicks and the males are all killed often in grinders.

    I suppose you might find someone who has rescued chickens as pets, that would be lovely. Otherwise, you really need to look further than the "humane" stamps on packaging, because it's only legalese and chickens are, sadly, only property.

    I've purchased the vegan cupcake cookbook, and have experimented with vegan baking, and it does taste great. But I don't think it's necessarily healthier to always leave out eggs for example, you miss out on plenty of great protein and vitamins. And if you make sure to buy farm fresh, organic eggs that you know come from humane conditions, it's not hurting animals or the environment. (I would still use soy or almond milk however over cow's milk). It's been repeatedly shown that vegetarians fare better than meat-eaters OR vegans.
