Which Cheeses Are Acceptable on Pizza?

    It depends. For a classic New York pizza, it's mozzarella (shredded) and Parmesan, and nothing else. I like the so-called "lasagne pizza" with dollops of meat sauce and ricotta covered with bits of fresh mozzarella, and I've even enjoyed "cheeseburger pizza" with sauteed beef and American cheese. "Gourmet pizza" can have anything - but that's not *pizza* to me, that's topped flatbread. Pizza is one thing, and one thing only: crust, slightly-sweet tomato sauce, lots of shredded block mozzarella and a sprinkling of Parmesan (or Pecorino Romano, if you must).

    The correct answer is all of them or even none of them.

    There are zero cheeses which are unacceptable on a pizza. I might balk at the idea of eating something with a "processed cheese food" instead of actual cheese, but I'd probably still eat it, even if it was a Boboli pizza shell with Cheeze Whiz and Spam.
