I chose the Z68 system because it's more of a main stream system. So benchmarks will be more relevant to the both average and enthusiast user.

it would be nice to se the low end with the i7 cpu.

I voted for the Z68 Based system because that is what most people can afford the only different thing I would do is use the 2700k instead. thanks

I don't think the best rig would be good, it is a very high end and expensive configuration and as such I don't think many pc gamers have a computer with similar power. I think the low-end X79 or even the Z68 would be better as people can see how a graphics card would perform in a configuration more similar (in terms of power) to their own.
If this is going to be for vid card testing go for the best. The Z68 platform has too few pci lanes and the pci 3.0 isn't always native. More pci lanes the better a tri or quad sli platform will run. Also just removing anything on the build that could be a potential bottle neck is important. I voted for the best rig and I am sticking with my guns.
