On pulled pork I like a combo of vinegary peppery (yes sweet) sauce with a hit of "Bbq mustard (vinegar, yellow mustard, brown sugar, rub)"- a blend of the Carolinas, if you will. (vinegary think George's or Guy Fierri's Carolina)
On Brisket: nothing but rub on a not too lean bark
Chicken (parts): Mayo (Big Bob Gibson style)
Chicken (pulled): tomato based
Ribs: Tomato based (KC)
PS: Kat- missed you at Big Apple...
