Was the student's demonstration acceptable or not?
It was acceptable because he planned to eat the chicken. It's the same thing that happens thousands of times a day in slaughterhouses around the world, so why should this instance be a problem?
It was unacceptable. The killing of an animal for the purposes of a school assignment is disgusting.
He may have been making a point about food, but he clearly intended to upset his audience. That's the part that is unacceptable.
I'm not sure how I feel about it.
