Absolutely! Their food is delicious and I could care less about their beliefs.

Couldn't care less NOT could care less which is what you've written.

I could care less, that means I care some, enough that I could care less than I already care.

Couldn't care less means I that you are at the least amount of caring you can muster. This usually means the issue is so unimportant you couldn't possible care less than you already do.
