Actually, apparently David Lynch was asked at one point to direct Return of the Jedi:

Let it also stand for the record that the best Star Wars movies are the ones NOT directed by George Lucas. In fact, let it stand for the record that George Lucas may very well be a good filmmaker (I will not argue that point), but is a terrible director (there's a difference). The best thing that could have happened to Star Wars is if he never directed any of them.

    So it's not so blasphemous.

In answer to your question, however, Guillermo del Toro would make it fun enough and visual enough and bizarre enough. I'd actually throw in Alfonso Cuaron as a separate option, that man works straight-up magic with the camera.
