I vote Yes, in a healthy balance with whole foods (for health-sake). It's so easy to fall into a vegan junk food diet. *That second option though, lol*
I completely agree with you, that as long as it's vegan I support what ever someone needs for comfort/ tastebuds, etc. For example, I actually became giddy when I discovered our local baker made "accidentally" vegan cherry turn-overs. That was a good day!
As for using terms such as burger, sausage, cheese, etc., I believe as you do that they are just forms and ingredients. Cashew cheese is real, you can ferment it too!
