Ian Somerhalder should play Christian Grey because he can perfectly execute the darkness and sex appeal required in the role, along with the fact that he fits the criterion of being exceptionally handsome.
As far as Anastasia is concerned, Nina Dobrev would be a great choice. I'm saying this because she is a very talented actor and that has been very well portrayed by her execution of Elena and Katherine, the polar opposites of each other. So, I think she can brilliantly perform the role of Anastasia as she can convey the emotional progression of Anastasia from being reserved to bold. She may not fulfill the physical criterion of looking average, but does that really matter? ;)

I can't see this trilogy being made into 3 different movies. The story could be told in 1 movie - and probably "X" rated! And I agree with other comments that Alexis Bledel makes a better choice for Anastasia. Matt Bomer isn't tall enough.

If they were still with us, the obvious choice would be Hume Cronin & Jessica Tandy (they were both wonderful in "The Gin Game"). They could tell the story in flash back, and it wouldn't in the least bit matter because the younger characters who play them would be done in stop-frame claymation like in Trey Parker's "Team America," using the distinctive but synthesized voices of James Earl Jones and Bea Arthur.
