Olive & Edie goes well together.
Olive & Edith.
Edie (although still have the pronunciation/spelling problem)
Edith (nn Edie - solves the pronunciation/spelling problems of just Edie - 'short for Edith' makes sense to people quickly and means they are less likely to call her Eddie and wonder if she is a boy/girl when making medical/dentist appointments).
I think a name that doesn't end in 'ia' if middle name is Julia - for example, definitely not Amelia.
