Piece: we are not Prime members or won't use the Prime Reading benefit, and just buy the books we want

Prime: we are Prime members and will use Prime Reading, even if we also pay for some other individual books

Premium: we subscribe to Kindle Unlimited, even if we also pay for some other individual books and may also be Prime members
